What You'll Need

  • Pour Over Brewer (Kalita Wave, Chemex, or your favorite dripper)
  • Paper Filter
  • Grinder
  • 30g (about 4 TBSP) of Bongo Coffee
  • 250g hot water, just off the boil (about 205°F)
  • 150g ice
  • Gooseneck Kettle
  • Scale
  • Timer
  • Bongo Diner Mug

LET'S GET BREWING!

    Measure The Coffee

    • Measure out 30 grams of coffee (about 4 tablespoons).
    • Add 150 grams of ice to your carafe or mug.
    • Heat 250 grams (about 8½ oz) of water to 205°F, just off the boil.

    Grind The Coffee

    • Grind your coffee to a medium setting, similar in size to coarse sand.
    • Place your paper filter in the brewer and rinse it with hot water. Discard the rinse water.

    Start Brewing

    • Place your brewer on top of the carafe or mug filled with ice.
    • Add the ground coffee to the filter and start a timer.
    • Pour 60 grams of hot water over the grounds, making sure they are evenly saturated.
    • Let the coffee bloom for 30 seconds. This allows trapped gases to escape and promotes even extraction.
    • Slowly pour the remaining 190 grams of water in steady circular motions.
    • Aim to finish pouring around 2 minutes.

    Finish Brewing

    • Allow the coffee to fully drain through the brewer. Total brew time should be about 2½–3 minutes.
    • Remove the brewer and gently swirl the carafe or mug to ensure the melted ice and coffee are fully combined.
